Executive Chef Michael Ledwith is an artist himself and an inventive yet traditional Chef with a passion for the evolution of food. Born in New York, He trained in some of the best kitchens in N.Y. Chef Michael traveled to St. Thomas, St. John and Martinique in the Caribbean, honing his skill in fish cookery at top Caribbean Resorts and restaurants.
After years working with Alexander Litras and earning wonderful accolades at the famed Cafe Margaux in Central Florida, Ledwith returned to the "Island Lifestyle" in the Florida Keys and settled in Islamorada. Chef Michael sources sustainable, responsibly harvested fish and seafood, helping to ensure a healthy fish population for generations to come.
In addition to this Islamorada restaurant, Chef Michael spends time creating custom menus for offsite catering events including famed Florida Keys weddings. "If a customer can dream it, I can create it", he said of his fondness for the specialized menus that are envisioned by event planners and brides. Of his philosophy about the business Chef Michael says, "We are only as good as the wonderful, talented kitchen and dining room team we assemble." Fishing, cooking and dining with his three children highlight his free time.
